I am planning to make lots of mexican food, even thought I am mexican our food just never gets old, I have posted some great mexican recipes on this blog and thought i’ll post some of them right now so you can make for this awesome holiday :)

New Header and Buttons

Hello everyone!
I’ve just uploaded a new header and some buttons for pinterest and twitter!

Do you guys like it?
I’ve been into designing for a while now, but now that im co-working with my sister’s friend I’m just loving everything about designs and decided it was time to give my blog a new look :)

Have you guys made a pinterest account? I thought i’ll never made one and well I now have one hahaha, and im obsessed with it!

Cupcakes

Hello everyone! I hope you had a great valentine’s day! :)

Today I want to share with you what i’ve been up to.
I went to a cupcake class on january to learn how to make cupcakes, fill them, and I learned a new buttercream recipe!

Then I decided to sell cupcakes for valentine’s day, it was a chaos but I made it and I loved it.

Yesterday I went to another cupcake class, but this time we learned how to make “cupcake pull apart cake”, here in Mexico it’s really common for kid’s parties to have this types of cakes to match with the theme of your parties, I decided to make a “Hello Kitty Pull apart cake” haha my little nephew sunk his finger in it. we learned another buttercream frosting recipe, and I can’t wait to share all of this with you guys! :)

I’m going to be practicing this new cake and i’ll be making a tutorial really soon.

Would you guys be interested to know how to make this type of cakes?

I think its a fun idea for kid’s to each take their own slice of “cake” and cupcakes are always fun :)

I’ve also been loving “pinterest” I wanted to resist the temptation of making one, but I think I might have to surrender! It’s amazing! :)

Bought puff pastry

Hello Guys.
So today is Friday! YAY finally I have lots of things to bake this weekend, I’m going to bake my first homemade pinneaple upside down cake. And if it turns out good i’ll def post it on the blog!

For now I just wanted to share my experience with bought puff pastry, I bought mine in costco and I thought it was actually  cheaper than I expected.

I made:
Ham and Cheese in Puff Pastry.
Annie’s Apple Pie Cookies (Instead of making the pie dough I used puff pastry and they turned out great!)
And last but not least I made little “empanadas” with it, I filled them with dulce de leche,strawberry and pinneaple jam. They turned out soooo good! I took pictures of the process and im going to share them with you.

Grab a sheet of puff pastry and sprinkle some flour.

Cut the puff pastry in squares.

Grab a piece and Brush the border with some egg wash.

Place some Jam, in this case I used strawberry Jam

Place the second piece on top of the filled pastry.

press with a fork, brush the top with egg wash if you want and cut a few slits in the top to allow steam to escape.

Bake them 350 °F for 15-20 minutes or until golden brown.

Sprinkle some Icing sugar on top and enjoy!! :)

I do want to make my own puff pastry someday but for now I think bought puff pastry is awesome!

Merry Christmas

Hello everyone and Merry christmas to all of you!!!

Hope you guys are having great times with your loved ones!
Today im not posting a recipe but im letting you guys know what has happened since I last updated this blog.

For christmas I got my very first KitchenAid Mixer! SO EXCITING!!

If you’ve been following my blog I have wished for it since before I started blogging and im so excited I finally have it in my kitchen!
Can’t wait to start making bread,cookies,cakes,etc.

I also wanted to share some pictures of how our table looked in christmas day.


We had: Turkey,Sopa Fria,Mashed potatoes and a classic dish from here that is called “Picadillo” with some bread and cranberry slices.
we ate too much of everything and it was all really good!
I love this holidays not just because of the food or the presents, but the time we spent with our loved ones, share stories,memories but most importantly just being together! :)

I also can’t believe that it’s almost 2012 I remember I started this year 2011 thinking about starting a blog and found it so intimidating but now here I am looking forward to posting more recipes and just enjoying everyone’s recipes and stories too. I am grateful of having this blog because it has been a great journey which I’ve learned so many things and I’ve shown to my family that I find cooking and baking not only a hobby but that I truly love this!! :)

Can’t wait for New years eve! I’m going to be in charge of the deserts so hopefully everything will turn out good! I’ll keep you guys posted! :)

I have great recipes coming this new year!

Happy Independence Day

Yesterday at night it was a Fiesta here in mexico because of our independence.
There were fireworks, mexican food, candies and of course cake!

I made this cake at the last-minute! So it was great that I could pull it off!
It isn’t as hard as you think but it really requires some time!
Today we are still having a fiesta since not everyone works or goes to school!

we get to relax and celebrate a great weekend!
I’m hosting a giveaway that ends tonight for some mexican souvenirs!

Hello September

Hello everyone!
It’s been a while since I hadn’t posted anything on the blog,
and while I don’t have a recipe to share today, I wanted to share some pictures of what I had been up to!
First of all it was my baby nephew’s first birthday! He had a blast!

and we ate lots of cake! :)
Then my oldest sister was hospitalized because she had an inguinal hernia :S Everything is good now, she is feeling much better! :)
Then It was my birthday this weekend! Yay! I can’t believe im 17 I feel kind of old haha.
We celebrated my birthday and a goodbye party for my cousin who wants to be a pastor. It’s like going to college I guess, we are not going to see him for a while, I can’t believe you have to study for 9 years!!!!! to be a pastor.

He is so excited! :) But we sure are going to miss him!!!! :)

Hello everyone! I hope you are all enjoying what’s left of summer, I know I am enjoying time with my cousins, they are traveling back to their hometown on sunday, so we are really having a great time while they are here.
That’s why I haven’t posted any recipes, but I promise that you’ll see some great new recipes.

But for now I have to tell you that I had a secret for a while now …

Chiles Rellenos de Queso

Or Stuffed with cheese Green Peppers!

My sisters always ask my Mom to make this recipe, at least twice a month, they just love how when they give the chile a bite the cheese melts in their mouth! They love to eat them as “Tacos” with a warm corn tortillas, I mean who doesn’t like corn tortillas? they go right with everything and they are so good, it is one of the things I am missing to eat because today I got an appointment with the dentist to tighten my braces and it is starting to hurt again, I’m having soup today but hopefully tomorrow I can start eating solid stuff again! :)

Anyway this Stuffed green peppers are truly delicious and you can fill them with anything, but we love cheese haha I really hope you give this recipe a try!

You are not going to regret it! ;)

Ingredients:
6 Poblano Peppers
6 sticks of chihuahua cheese (you can use the cheese that you want)
4 eggs
Cornstarch
Vegetable oil for frying

Preparation:

Clean the peppers and roast them if you want to know how to roast a pepper enter here
Take the roasted skin away with water and open them on one side to remove the veins and leave a little hole for the cheese.

Fill them with cheese sticks.


Spread some Cornstarch.

Set aside and start heating a pan with some oil.

Now on a clean bowl separate the egg whites and the egg yolks, whisk the egg whites until stiff peaks form, add the 4 egg yolks all at once.

Soak the chiles with the egg mixture

and fry them, 1-2 minutes on each side

And there you’ll have a great “chiles rellenos” :D

I’m Back

So, As you may have noticed I didn’t post anything this past days, well I didn’t have wireless internet, so I wasn’t able to get on here. Sorry :( .
But Look what I bought!

Yay! My Mom bought me a Cake leveler, and I bought myself a mini cupcake pan and some mini cupcake wrappers :) So cute!
I just wanted to share that with you!

Tomorrow you’ll have a new recipe on the blog and I’m very excited to show it to you! :)

I’m going to the dentist today because they are going to place some spacers in my mouth before the braces, so excited :)
