Bought puff pastry

Hello Guys.
So today is Friday! YAY finally I have lots of things to bake this weekend, I’m going to bake my first homemade pinneaple upside down cake. And if it turns out good i’ll def post it on the blog!

For now I just wanted to share my experience with bought puff pastry, I bought mine in costco and I thought it was actually  cheaper than I expected.

I made:
Ham and Cheese in Puff Pastry.
Annie’s Apple Pie Cookies (Instead of making the pie dough I used puff pastry and they turned out great!)
And last but not least I made little “empanadas” with it, I filled them with dulce de leche,strawberry and pinneaple jam. They turned out soooo good! I took pictures of the process and im going to share them with you.

Grab a sheet of puff pastry and sprinkle some flour.

Cut the puff pastry in squares.

Grab a piece and Brush the border with some egg wash.

Place some Jam, in this case I used strawberry Jam

Place the second piece on top of the filled pastry.

press with a fork, brush the top with egg wash if you want and cut a few slits in the top to allow steam to escape.

Bake them 350 °F for 15-20 minutes or until golden brown.

Sprinkle some Icing sugar on top and enjoy!! :)

I do want to make my own puff pastry someday but for now I think bought puff pastry is awesome!

Celery Bread

Hello! How was everyone’s weekend?

Today is monday and even thought I wasnt a big “Monday” fan I always love to post my recipes on this day It makes Mondays more exciting haha.
I don’t know about you but I’ve actually been thinking of valentine’s day a lot, It’s coming out and im ready to try out some recipes so I can post them on the blog and to give to my friends, I have valentine’s day recipes bookmarked since last valentine when I didn’t even own an oven or this blog.
So im pumped up to bake, bake and well… BAKE! :D

Today I’m going to share a recipe that we made for christmas, but I think you can make it any other day and enjoyed it as much as we did.
Celery Bread or as we call it here: Pan de Apio.
It’s and old recipe from my grandmother, she used to make it every christmas or new years, My mom found the recipe in one of her recipe books, we made it and she says it tastes just the same!
So I decided to share the recipe!

 

Ingredients:
16 slices of white bread in cubes
5 eggs
2 cups of celery chopped
1 cup of green onions chopped
1 stick of butter (melted and cooled)
2 cups of green apple in cubes
1/2 tablespoon of poultry
2 cups of chicken soup
pepper
salt

Preparation:
Cut the slices of bread into cubes and place them on a bowl

Chop the celery,green onions,apple


add them and also add the 5 eggs,butter,pepper,salt,poultry to the bowl


Mix with your hands and start adding the chicken soup until everything is well combined. (you may not use all the chicken soup)

Place the mixture into a buttered Pyrex

Cover it with foil paper and Bake at 400 degrees for 30 minutes, take it out of the oven and take out the foil paper and bake again without it for 30 more minutes.

Cover it with plastic wrap to keep warm until serving.

Sorry for not taking a better picture of the celery bread, When I wanted to grab a slice to save for the picture there wasnt any! Everyone enjoyed it and ate it all.

Mexican Wedding Cookies

Happy New Year Everyone! :)

I struggled to decide which recipe I was going to share with you today.
It’s the first recipe I’ll share this 2012 so it’s important, I thought I would share a sweet recipe.
For me this type of cookie reminds me of Chihuahua where my Aunt Lucy is from, She’d always make this for parties or just family reunions and of course they are delicious.
I’ve seen that people called them “Mexican wedding cookies”, or “Russian tea cookies”, We call them: Bolitas de Nuez or Besos de Nuez, either way they are really good and I’ve been wanting to make them for a long time.
I’m glad I finally gave them a try.

Ingredients:
1 Stick of butter
1/2 Cup of ground nuts
1 Cup of flour
1 Teaspoon vanilla
3 Tablespoons of sugar
1/2 Teaspoon of baking powder

Icing sugar for rolling.

Preparation:
Preheat the oven to 275 degrees F. Line cookies sheets with parchment paper.

In a food processor ground the nut.


Using an electric mixer, cream the butter and sugar at medium-speed until it is smooth. Beat in the vanilla. At low-speed gradually add the flour and baking powder. Mix in the pecans with a spatula.

With floured hands, take out about 1/2 tablespoon of dough and shape into little balls.

Place onto prepared cookie sheets.

Bake for 15-20 minutes or until light brown. When cool enough to handle but still warm, roll in icing sugar.

Note: If you want you can double the recipe since they go by really fast! :)

Merry Christmas

Hello everyone and Merry christmas to all of you!!!

Hope you guys are having great times with your loved ones!
Today im not posting a recipe but im letting you guys know what has happened since I last updated this blog.

For christmas I got my very first KitchenAid Mixer! SO EXCITING!!

If you’ve been following my blog I have wished for it since before I started blogging and im so excited I finally have it in my kitchen!
Can’t wait to start making bread,cookies,cakes,etc.

I also wanted to share some pictures of how our table looked in christmas day.


We had: Turkey,Sopa Fria,Mashed potatoes and a classic dish from here that is called “Picadillo” with some bread and cranberry slices.
we ate too much of everything and it was all really good!
I love this holidays not just because of the food or the presents, but the time we spent with our loved ones, share stories,memories but most importantly just being together! :)

I also can’t believe that it’s almost 2012 I remember I started this year 2011 thinking about starting a blog and found it so intimidating but now here I am looking forward to posting more recipes and just enjoying everyone’s recipes and stories too. I am grateful of having this blog because it has been a great journey which I’ve learned so many things and I’ve shown to my family that I find cooking and baking not only a hobby but that I truly love this!! :)

Can’t wait for New years eve! I’m going to be in charge of the deserts so hopefully everything will turn out good! I’ll keep you guys posted! :)

Pastel de Carne


Hello guys! :)
I haven’t posted in here for almost a month!!
I’ve been really busy with school and I have to present some exams, so I’ve been studying and studying, Can’t wait to be on vacations!
Also we are remodeling our kitchen!!!!! YAY, My sister bought my mom a new oven and yesterday it got installed and im ready to bake,bake and bake.
I’m saving to buy plenty of baking sheets, and books!
I’m going to Arizona next week, and im going to buy some books there,

any one got some recommendations :) ?

I’ll love to hear what books you guys have.
Talking about this “meatloaf” or as we call it here “Pastel de Carne” I’ve known this dish forever, and Since im a pork fan, I’ve always loved it! And im ready to share the recipe with you, I find it really simple and I think it works well to make it on this christmas-y season!

Ingredients:
1 1/2 kilo of ground pork
4 or 5 stripes of bacon chopped
1 cup of chopped ham
1/2 onion chopped
500 grams tomato puree
3/4 cup evaporated milk
Pepper
Salt
2 teaspoons chicken soup powder
1 Cup bread crumbs

Preparation:
Add the meat,milk,onions,ham,bacon,tomato puree, pepper,salt,chicken soup powder, and bread crumbs on a bowl.Mix all the ingredients together with your hands until well combinedPut some butter into a pan and add the meat


Place some foil on top of the pan and cover.

Cook it on a medium-low heat for one hour and a half.

Serve with some mashed potatoes! and enjoy!!! :)

Zucchini Soup

In just one blink of an eye we are almost on december that means were almost on christmas!
I mean just days ago I was celebrating my baby nephews birthday in august, But those summer days are more than over and im enjoying this weather like no one.
We have been making so many plans, because my sister bought my mom a new oven, and were going to make some remodeling around the kitchen which always excites me.
I can’t wait to have my Kitchenaid Mixer for christmas to make so many stuff! I’ve been bookmarking recipes since I was told I was going to get that for christmas.

I havent posted a full recipe on the blog since almost a month ago, I wasn’t going to post this but I found this recipe super easy to make and everyone loves it When my mom makes it, everyone wants more than one bowl of it.
If you are a zucchini fan you should def try this! I hope you like it! :)

Ingredients:
6 zucchini
2 Tablespoons Butter
90g Cream Cheese
Pepper
1/4 Teaspoon Curry
1/2 Tablespoon Sugar
Croutons

Preparation:
Cut Zucchini into pieces and cook it with water until soft.
On a saucepan place the 2 tablespoons of butter and let it melt on a medium-low heat.
when the zucchinis are soft place them on a blender with some of the water that you cooked them with and add the cream cheese and blend.

when everything is blended, Add the mixture to the Saucepan and start adding the pepper, curry and sugar.


Let it boil and your ready to serve!

Add some croutons if desired.

Happy Halloween

Hello everyone! it’s been a while since I haven’t posted anything around here!
But even thought I don’t have a full recipe to share im going to share some pictures of cupcakes I made yesterday.

Strawberry mini cupcakes with cream cheese frosting!

I decided to make this cupcakes for the family since every Sunday we get together.

I made 50 mini cupcakes and decorated them very simple

But then decided to add some candy corn in honor of Halloween, and some chocolate balls for decoration! They turned out so cute!

I’m going to share with you the cream cheese frosting recipe I used.
1 8oz package of cream cheese
1/2 butter stick
2-3 cups of powdered sugar
1 teaspoon of vanilla

Cream together the cream cheese and butter with the mixer on medium speed for about 2 minutes, then add the vanilla and start adding the powdered sugar on low for about 3-5 minutes until it’s all well combined!

Note: Some cream cheese frosting call for milk or heavy cream, I don’t use it because I don’t want the frosting to be more runny than it is.
And I found out that making the frosting before making the cupcakes and refrigerate it makes it more easy to pipe!
