Stuffed Zucchini

My older sister Cecy, told my mom she wanted stuffed zucchini,
So my mom looked for recipes and found this one.
It’s a pretty good one when you are making your first stuffed zucchini
simple but delicious!

5 to 6 zucchini – My mom and I found this zucchini in the supermarket they are kind of shaped like pumpkins. You can use what you have in hand.

8 oz. Cream cheese
2 Tablespoons Olive oil
1/4 Cup Onion finely chopped
1 Garlic clove finely chopped
2 Tomatoes finely chopped
1/2 Cup Ham finely chopped
1/4 Cup canned Cornseeds
Pinch of salt
Pinch of Pepper

Wash zucchini; cook whole in a small amount of boiling water with a pinch of salt for about 8 minutes or until they feel soft. Let them cool.
Drain and cut, Scoop out pulp.

Add olive oil in a pan with the Garlic, Onion, Tomatoes, Ham and Cream cheese.
Cook for 5 minutes and add a Pinch of salt and pepper.

Stuff the zucchini.
Place zucchini in a greased baking dish and bake at 350 degrees for about 10 – 15 minutes or until Zucchini is tender.

Note: You can play with the filling and add whatever you have on hand 🙂
