Hello everyone long time no post, but I am here now to introduce you to one of my favorite dishes “Entomatadas” you might think what is that? well… entomatadas are a typical dish from here they are made of a folded corn tortilla which has first been fried in oil and then bathed in a tomato sauce, this dish looks like enchiladas, but the taste it’s completely different, its sooooo good! The secret is using this “salsa” that my mom recently discover and adds to it to make it a little spicy that’s what makes it really good. so here’s the recipe 🙂
610 Grams tomato puree
100 Grams Salsa pato
3 Garlic cloves
2 Tablespoons of flour
1 Teaspoon chicken soup powder
on a saucepan place some oil in a medium-high heat add the garlic cloves until light golden then put away and add the flour until it thickens then add the tomato puree and half of the salsa el pato, pepper, chicken soup powder and if you want the sauce to be more liquid you can add 1/2 cup of water or more.
Now that our sauce is done, grab some cheese and cut them in sticks, then fold them in the corn tortillas and fry them with some oil.
Grab a bowl and place some napkins on the bottom so it will absorb the excess of oil.
and dip them in the tomato sauce add some cheese, and cream 🙂

I don’t know if you guys can find it in the US im hoping that maybe they sell it on walmart in the mexican/hispanic aisle.
So now we can enjoy a delicious Entomatada!!! 🙂 Yummy!

or Empanadas de Atun as we call them!
On friday my mom showed me how to make this empanadas and I was surprised at how easy it was to make them.
Since we are not able to eat “animal meat” on friday’s except for fish because of our religion (we are catholic) we eat lots of fish during this month.
This empanadas are really versatile you can add or take some of the ingredients in the tuna mixture to please your liking, If we make this again this friday I’ll be adding some kernel corn, everyone loved them they were so good! and they went by really fast, so I really hope you like them! 🙂
For the tuna mixture:
2 cans of tuna
Green onion to taste
1/2 chopped tomato
olives to taste finely chopped
1/2 chopped red pepper
For the Dough:
500 grams of Maseca
1/2 teaspoon of baking powder
1/2 cup of liquid Chile Colorado
On a saucepan cook the vegetables with some oil and add the tuna. Set Aside.
In a bowl add the Maseca, baking powder, salt, pepper, and the liquid chile Colorado, mix with some water until you get a kind of soft but still crumbly texture.
Make little balls and flatte them up with a Tortilla Presser or you can roll them with a rolling-pin (just make sure you do it with parchment paper on both sides of the mixture so it wont stick.)
Place a tablespoon or so of the Tuna mixture and make the empanadas
Fry them with oil and your ready to serve!
I cut the empanadas in half so you can see how it looks inside 🙂

Hello! How was everyone’s weekend?
Today is monday and even thought I wasnt a big “Monday” fan I always love to post my recipes on this day It makes Mondays more exciting haha.
I don’t know about you but I’ve actually been thinking of valentine’s day a lot, It’s coming out and im ready to try out some recipes so I can post them on the blog and to give to my friends, I have valentine’s day recipes bookmarked since last valentine when I didn’t even own an oven or this blog.
So im pumped up to bake, bake and well… BAKE! 😀
Today I’m going to share a recipe that we made for christmas, but I think you can make it any other day and enjoyed it as much as we did.
Celery Bread or as we call it here: Pan de Apio.
It’s and old recipe from my grandmother, she used to make it every christmas or new years, My mom found the recipe in one of her recipe books, we made it and she says it tastes just the same!
So I decided to share the recipe!
16 slices of white bread in cubes
2 cups of celery chopped
1 cup of green onions chopped
1 stick of butter (melted and cooled)
2 cups of green apple in cubes
1/2 tablespoon of poultry
2 cups of chicken soup
Cut the slices of bread into cubes and place them on a bowl
Chop the celery,green onions,apple
add them and also add the 5 eggs,butter,pepper,salt,poultry to the bowl
Mix with your hands and start adding the chicken soup until everything is well combined. (you may not use all the chicken soup)
Place the mixture into a buttered Pyrex
Cover it with foil paper and Bake at 400 degrees for 30 minutes, take it out of the oven and take out the foil paper and bake again without it for 30 more minutes.
Cover it with plastic wrap to keep warm until serving.
Sorry for not taking a better picture of the celery bread, When I wanted to grab a slice to save for the picture there wasnt any! Everyone enjoyed it and ate it all.

I haven’t posted in here for almost a month!!
I’ve been really busy with school and I have to present some exams, so I’ve been studying and studying, Can’t wait to be on vacations!
Also we are remodeling our kitchen!!!!! YAY, My sister bought my mom a new oven and yesterday it got installed and im ready to bake,bake and bake.
I’m saving to buy plenty of baking sheets, and books!
I’m going to Arizona next week, and im going to buy some books there,
any one got some recommendations :)?

Talking about this “meatloaf” or as we call it here “Pastel de Carne” I’ve known this dish forever, and Since im a pork fan, I’ve always loved it! And im ready to share the recipe with you, I find it really simple and I think it works well to make it on this christmas-y season!
1 1/2 kilo of ground pork
4 or 5 stripes of bacon chopped
1 cup of chopped ham
1/2 onion chopped
500 grams tomato puree
3/4 cup evaporated milk
2 teaspoons chicken soup powder
1 Cup bread crumbs
Add the meat,milk,onions,ham,bacon,tomato puree, pepper,salt,chicken soup powder, and bread crumbs on a bowl.Mix all the ingredients together with your hands until well combinedPut some butter into a pan and add the meat
Place some foil on top of the pan and cover.
Cook it on a medium-low heat for one hour and a half.
Serve with some mashed potatoes! and enjoy!!! 🙂

In just one blink of an eye we are almost on december that means were almost on christmas!
I mean just days ago I was celebrating my baby nephews birthday in august, But those summer days are more than over and im enjoying this weather like no one.
We have been making so many plans, because my sister bought my mom a new oven, and were going to make some remodeling around the kitchen which always excites me.
I can’t wait to have my Kitchenaid Mixer for christmas to make so many stuff! I’ve been bookmarking recipes since I was told I was going to get that for christmas.
I havent posted a full recipe on the blog since almost a month ago, I wasn’t going to post this but I found this recipe super easy to make and everyone loves it When my mom makes it, everyone wants more than one bowl of it.
If you are a zucchini fan you should def try this! I hope you like it! 🙂
2 Tablespoons Butter
90g Cream Cheese
1/4 Teaspoon Curry
1/2 Tablespoon Sugar
Cut Zucchini into pieces and cook it with water until soft.
On a saucepan place the 2 tablespoons of butter and let it melt on a medium-low heat.
when the zucchinis are soft place them on a blender with some of the water that you cooked them with and add the cream cheese and blend.
when everything is blended, Add the mixture to the Saucepan and start adding the pepper, curry and sugar.
Let it boil and your ready to serve!
Add some croutons if desired.

This past week has been busy, I had my appointment to go to the dentist and he tightened my teeth, and I was in pain for almost the entire past week. Ice cream always makes me feel better after I go to the dentist, I feel that the coldness of it makes my mouth kind of numb and I forget about the pain for a bit!
Today I am feeling way better and ready to eat again!
But before my appointment My mom and myself made this great pasta.
Let me tell you about it, im in love with it! my Mom makes this pasta when my sisters bring their friends, or when my family comes over, I’ve always thought it was hard to make, but a year ago I told my mom I wanted to learn how to prepare this, and found it very easy to make, maybe the “difficult” part would be roasting the peppers, But I think once you get the technique you would do great! 🙂
I seriously can’t get enough of it! I had it for lunch and for dinner!

500 Grams Pasta
3 Green chiles
500 Grams cream
400 Grams corn kernels
2 Cans evaporated milk
1 Teaspoon pepper
1 Tablespoon chicken soup powder
2 Tablespoon butter
Cook Pasta as it says on the package.
Roast the Chile verde, place them on a large griddle over medium-high heat.
Roast until the skin turns black.
Remove peppers from griddle and place in a Ziploc bag, allowing them to sweat for 5 minutes.
Transfer to a plate to cool.
Peel and discard the outer skin of the peppers and remove the seeds and veins.
On a blender place the evaporated milk, butter, cream, chicken soup powder, pepper and mix until smooth.
On a Saucepan in a medium-high heat place the mix and wait until it starts to boil
Add the pasta and corn kernels give it a mix and place the flame on a medium-low heat and cover the pasta for 10-15 minutes, turn off the heat and serve!
Optional: You can place some Chile verde or Poblano peppers halved lengthwise on top of the pasta before covering. I used Frozen ones!

or Enchiladas de pollo
I’ve been anxiously waiting to post this recipe for a week now, I love chicken enchiladas, I mean who doesn’t? they are sooooooo good.
Today the classes officially start here in Mexico, And I remember my Mom would always take a picture of our first day back to school and I would feel embarrassed about it, but that’s what Moms do right? haha, I remember when I got back to school my Mom would receive us with a big plate of enchiladas, I don’t know why but I remember eating them every year at least twice a month, I feel here in Mexico we are used to having spicy things, and we grow up enjoying them, this dish is really tasty and sometimes we just can’t have enough flutes!
The fried corn tortilla gives a crunchiness that’s just too good to explain.
I really hope you guys enjoy them as much as we do here!
500 Grams dried chile Colorado
1 Chicken breast
20 Corn tortillas
1 Tomato finely chopped
1/2 Onion finely chopped
Cheese of your choice
1 Teaspoon chicken soup powder
1 – 2 Teaspoon Sugar
Hydrate the chile Colorado with water on a saucepan for 30 minutes on a medium heat.
on another clean saucepan place the tomato and onion finely chopped with the chicken breast previously cooked and shredded cook for about 5 minutes and set aside.
On a blender Mix the chile Colorado with the water until its well combined.
On a saucepan place 3 tablespoons of oil and 2 tablespoons of flour and strain the blended mix of chile.
Add the teaspoon of chicken soup powder and taste it if you feel it is very spicy add some sugar a teaspoon at a time.
Let it boil and then set aside.
Grab some corn tortillas and make some flutes.
fry them with some oil and dip them into the chile Colorado mix.
Grab a plate add some Lettuce, Tomato,the flutes and some cheese and cream.
And there you go a super delicious enchiladas ready to be eaten! Yummy! now I want some! haha.

or Azteca Cake
Today I want to introduce to you this amazing dish, I personally love it and I remember eating it since I was little, I’ve tried different versions of it, My grandma’s version, my Aunt’s version, but I love my mom’s version Simple and Classic.
No, this isn’t a sweet cake, it’s a delicious full with flavour cake.
You can make so many combinations with many ingredients, but we like to keep it simple.
If you love corn tortillas and chicken you are in luck!
This dish is going to be your new favourite one!
15-20 corn tortillas
1 chicken breast shredded
1 tomato sliced
1 onion sliced
Cheese of your preference
1 Orange pepper sliced
2 cups of sour Cream
1/2 cup Corn kernels
Cut the tortillas in little squares.
On a saucepan fry the chicken with the tomato and onion sliced. Set Aside
On a clean saucepan fry the corn tortillas with some oil and start layering the ingredients.
Tortillas, chicken, orange pepper, corn kernels, cheese and cream.
Cover them until the cheese melts and then you can serve.

My little cousins went back to their hometown this weekend, we really had a great time here, we went to the movies, we went to the park, we ate ice cream.. Lots of it!
We can’t wait for them to come back! they are so much fun! haha.
Today I wanted to bring a super easy meal for those lazy days that you don’t have time to spend hours in the kitchen or you are just lazy to make an elaborated meal, but you still want something tasty…
this Tuna salad is the perfect answer!
I personally love it I find it delicious and comforting with some salad cookies or on a sandwich…. yummy!
3 cans of Tuna (300-400 grams)
2 cups of potatoes in cubes
1 cup of carrots in cubes
Peas as much as you want
Corn kernels as much as you want
1 Big Spoon of mayo
On a bowl add the carrots with the tuna, peas and corn kernels.
The potatoes need to be almost cooked.
They need to be Cooled too and then add them to the salad.
Add a big spoon of mayo you can add as much as you want.
Add some pepper and Give it a little mix with a spoon
And there you go! a Delicious, Simple, And Super Easy to do Tuna Salad!

Or Stuffed with cheese Green Peppers!
My sisters always ask my Mom to make this recipe, at least twice a month, they just love how when they give the chile a bite the cheese melts in their mouth! They love to eat them as “Tacos” with a warm corn tortillas, I mean who doesn’t like corn tortillas? they go right with everything and they are so good, it is one of the things I am missing to eat because today I got an appointment with the dentist to tighten my braces and it is starting to hurt again, I’m having soup today but hopefully tomorrow I can start eating solid stuff again! 🙂
Anyway this Stuffed green peppers are truly delicious and you can fill them with anything, but we love cheese haha I really hope you give this recipe a try!

6 Poblano Peppers
6 sticks of chihuahua cheese (you can use the cheese that you want)
Vegetable oil for frying
Clean the peppers and roast them if you want to know how to roast a pepper enter here
Take the roasted skin away with water and open them on one side to remove the veins and leave a little hole for the cheese.
Fill them with cheese sticks.
Spread some Cornstarch.
Set aside and start heating a pan with some oil.
Now on a clean bowl separate the egg whites and the egg yolks, whisk the egg whites until stiff peaks form, add the 4 egg yolks all at once.
Soak the chiles with the egg mixture
and fry them, 1-2 minutes on each side
And there you’ll have a great “chiles rellenos” 😀
I wanted to let you guys know I’ll be absent for a couple of days, since my cousins are staying here for 2 weeks, I promise you I’ll post a new recipe on friday!
