Happy Independence Day

Yesterday at night it was a Fiesta here in mexico because of our independence.
There were fireworks, mexican food, candies and of course cake!

I made this cake at the last-minute! So it was great that I could pull it off!
It isn’t as hard as you think but it really requires some time!
Today we are still having a fiesta since not everyone works or goes to school!

we get to relax and celebrate a great weekend!
I’m hosting a giveaway that ends tonight for some mexican souvenirs!
But since I can’t send you guys all the food that we get to have, i found some recipes that are mexican and you can try them over the weekend for your friends or family!

Pan Dulce – Chef Dennis
Chicken flautas in roasted tomatillo – The Gallery Gourmet
Hibiscus Lime Popsicles – Family Style Food
Mexican Pork Pibil – Cook Sister

I found this website that has a great variety of mexican food too!
What’s Cooking Mexico

I have a Guacamole , Chicken enchiladas , Nopales recipe if you want to check it out too!

Hope this helps or gives you ideas to make a mexican weekend! 🙂
Have fun! And see you on Monday with a new recipe! 😀
Maggie.
